Ingredients: (per 1 serving)
(2) Egg White Thins®
1 tablespoon butter
1 cup of chicken, shredded or chopped
1 tablespoon Taco seasoning or ground cumin and chili powder
2-3 tablespoons of shredded cheddar cheese
Toppings: salsa, sour cream, or guacamole
Sauté chicken with taco seasoning in a pan until chicken is cooked through. Remove from pan and chop or shred chicken.
Heat butter on skillet, place thin on pan and warm up for 30 seconds on one side.
Flip the thin over and add shredded cheese all around the thin. Top with chicken and more cheese. Place second thin on top and let cheese melt, 3-4 minutes. Flip over and let other thin crisp up a bit, 3-4 minutes.
Transfer to a plate and cut in fours. Serve with salsa, sour cream, and/or guacamole. Enjoy!
